Tomato and Cheese Frittata with Fresh Herbs

1 Tbsp olive oil
1 onion, peeled and finely chopped
55 g | ½ cup grated Parmesan cheese, plus more for garnish
6 eggs, beaten
Kosher salt, to taste
Freshly ground black pepper, to taste
2 tomatoes, cut
1 Tbsp fresh parsley, chopped

1. Preheat broiler to high.

2. Heat oil in a cast iron skillet over medium heat. Sauté onion until soft and translucent.

3. In a large bowl, stir the cheese into the eggs and season with salt and pepper.

4. Pour into pan with onions and stir gently. Let cook untouched until eggs are nearly set.

5. Add the tomatoes on top and sprinkle with parsley. Place skillet in the broiler until eggs are slightly browned and cooked through. Garnish with additional Parmesan to serve.
